Blessed Are the Pollinators

Broccoli

DESCRIPTION:
Broccoli is a cool weather crop that can be sown in the garden in early spring (for spring harvest) and again in late summer (for fall harvest). Lightly steam the broccoli until it is bright green then top with a pinch of sea salt and a squeeze of lemon juice. It is a complete meal.

Winter squash is grown in the summer but can be stored for consumption in the winter. Butternut squash is a prolific producer and the squash stores well all winter. Brush it with olive oil and roast it in the oven or create winter-worthy butternut squash soup.

Canning Day

Preserving tomatoes is an ongoing effort. Whenever enough tomatoes are ripened to create 10-12 quarts, it is time to can. On the left is my juicer to create fresh tomato juice for canning. On the right are the tomatoes that will be canned in quart jars. The labor is not so difficult when I continue to can these medium-sized batches. The bliss of cooking Bolognese sauces in the winter with canned homegrown tomatoes is priceless.

Carrots like to grow in my garden now that the soil is amended to their liking. Children’s eyes get as big as saucers when they pull up a carrot from the garden. I convert veggie-resistant children to veggie-lovers simply by letting them pull up carrots in the garden. When they harvest it, they love to eat it.

Both sweet and hot peppers produce throughout the summer. But the pepper plants become prolific in late summer and early fall. Sitting in my harvest basket are Ajvorski, bell, poblano and jalepeno peppers ready to be enjoyed now (fresh) or preserved (dehydrated). Experimenting with hot pepper jellies is on the horizon.

Tomato plants continue to produce and ripen fruit until the first frost. Tomatoes left on the vine will be damaged by frost. Every year on the afternoon before the first frost, I pull all the tomatoes and store them on my back porch picnic table. As they bask in the morning sun protected from the frost, they continue to ripen for several weeks. Typically 90% of these end-of-season tomatoes ripen and are eaten fresh or are canned.
